Ingredients
500g pork fillet
6 taco shells
1 fresh sweet corn on the cob
¼ cup grated cheddar cheese
½ cup sour cream
¼ cup shredded lettuce
Pork Marinade
3 Tbs Chilli High’s Mango & Habanero sauce – Plus more for serving
3 Tbs oil
1tsp garlic powder
1tsp cumin powder
2 tsp paprika
½ tsp cayenne pepper
Salt and pepper to taste
Guacamole
1 ripe avocado
6 cherry tomatoes – chopped
1 Tbs lemon juice
Salt and pepper to taste
Method
- Mix the marinade ingredients together. Cut excess fat off the pork and place in the marinade. Cover well and set aside while you prepare the rest of the tacos.
- Smash the avocado and add the tomatoes, lemon juice and salt and pepper.
- Fry the corn in a large skillet over medium heat until golden brown. Cut the corn off the cob.
- Fry the pork fillet in the same skillet in 1Tbs of oil over medium heat. Fry until the sugars caramelize and the fillet is cooked throughout.
- Chop the fillet into small pieces and coat in Chilli High’s Mango & Habanero sauce.
- Build your tacos and enjoy.
